  TIMING CHART FOR BAKING  A TURKEY

 Wrap stuffed turkey in heave duty foil and bake at 450 degrees;  just before end of time, open foil to brown.

 6-9  lb.                        2 1/4 - 2 1/2 hr.
10-13 lb.                      2 3/4 - 3     hr.
14-17 lb.                      3     - 3 1/4 hr.
18-21 lb.                      3 1/4 - 3 1/2 hr.
22-24 lb.                      3 1/2 - 3 3/4 hr.

 Turkey Dressing

     Chop up all giblets and fry with sausage.  Drain some of the fat.  Add chopped onions, chopped celery including leaves.  Fry until done.  Meanwhile break up dried bread in a large bowl.  Add sage, thyme and salt.  Moisten with sherry and a little water.  The amount of sage should be 4 parts to 1 part of thyme.  You have enough spices when the dressing is sharp to the taste before it is baked.  Add cooked meats and vegetables and mix well.  I probably use 3/4 lb. sausage and enough onions and celery to fill a 10 1/2 inch skillet for a 22 lb. turkey.

 TURKEY CROQUETTES

 1 cup thick white sauce see recipes under sauces

 1 t parsley                                    1 t minced onion
2 cup ground cooked turkey          1/2 t lemon juice
salt and pepper to taste                  pinch of sage (optional)

     Combine ingredients well and chill several hours.  Divide into 8 portions.  (Mixture is soft to handle.)  Roll in bread crumbs, 1 egg beaten, and again in bread crumbs.  Fry until golden brown.  Can be made with lamb, beef, veal or ham.  I like to tuck a little cranberry sauce in each croquette before rolling.

 TURKEY AND CHICKEN TETRAZINI

 Left-over turkey                        white sauce - use half turkey soup instead of milk if you have it  or see recipes under sauces
canned mushrooms, drained        grated cheddar cheese
cooked macaroni - cook in turkey soup if you have it

  Mix, place in baking dish, spread more cheese over the top and bake until hot.

            TURKELY AND BROCKEY

The name of this recipe comes from a pre-Christmas choir party when the host, who obviously had imbibed too much, attempted to pronounce the main course of turkey and broccoli,

     Cook broccoli and drain.  Chop and place on bottom of 9x9 dish.  Layer strips of white meat over the broccoli.  Make 2 to 3 cups white sauce.  Add 1/2 t Worcestershire sauce per cup of sauce.  Crumble blue cheese to taste into the sauce.  (3 - 4 oz)  Mix the sauce well and pour over the turkey letting some drip into the broccoli.  Bake until bubbly.
